Here is the recipe for one of our favourite meals, the nourishing, warming, delicious and healthy Salmon Hot Pot from the Wagamama cookbook.
200g salmon, cut into 1 inch (2.54 cm) cubes
1 leeks, chopped into 1cm (0.39 inches) pieces
1 onion, roughly chopped
1 carrot, diced
1 stick of celery, finely diced
2 cloves garlic, crushed and chopped
Tablespoon sugar (optional)
75ml soy sauce
5 tablespoons water
300g brown rice (or however much you think 4 people will need)
Heat a casserole or crock pot with a little oil. Sweat the onion, leek, celery and carrot for around ten minutes over a medium heat. Then add the garlic and sugar and cook for one minute. Throw in the fish, season with salt and pepper, and cook for a further minute. Pour in the soy sauce and water (the colour of the sauce should be a lightish brown - too dark and it will be too salty, too light and it will be bland) and stir. Cover the pot and cook in the oven for 15 minutes. Serve over brown rice or udon noodles and enjoy.
